chicken burgers thai style

Cooking is not something that comes naturally to me. San Francisco happily supplies us with every takeout and delivery option we could possibly want in every food genre. The Thai restaurant below us knows both Morgan and my phone numbers and our orders. We should be more embarrassed than we are.

Suffice to say cooking (anything besides brownies or pie) is a step in the right direction!

But as of late our home has been taken over by It’s All Good, the latest cookbook by Ms. Gwyneth Paltrow.  We will see how long this kick lasts. Our love affair began at first bite with Chicken Burgers Thai Style.

You will need:

1 pound ground chicken (makes 4 good sized patties)
2 garlic cloves, very finely minced
2/3 cup cilantro, finely chopped
2 shallots, very finely minced
1 teaspoon very finely minced red chili (I used red pepper paste)
2 teaspoons fish sauce
½ teaspoon coarse sea salt
½ teaspoon freshly ground black pepper
2 tablespoons neutral oil (I used canola oil)

Thoroughly mix the chicken with the garlic, cilantro, shallots, red chili, fish sauce, salt, and pepper. Form the mixture into 4 burgers, each about ¾ inch thick.

Heat a grill or grill pan over medium heat. Rub each burger on both sides with a bit of the safflower oil and grill for about 10 minutes on the first side and another 6 minutes on the second, or until nicely marked and firm to the touch.
