At home in Minnesota my friend Kelly’s mama makes the most delicious fruit tart on the face of this earth (or at least we think so)! I’m not ashamed to say that we could take down an entire pan.

Jacque Jensen’s Fruit Tart
Cookie Crust
1 cup all-purpose flour
6 tablespoons butter or margarine, softened
2 tablespoons sugar
1 egg yolk
Spread
8 oz cream cheese
½ cup sugar
1 tsp. vanilla
Cream together and spread over cooled cookie crust
Fruit
You can use whatever fruit is in season cut into bit sized pieces. Add on top of the cream cheese layer.
Glaze
½ cup of water
¾ cup of orange juice
3 tbsp. corn starch
¾ cup sugar
Dash of salt
Bring to a boil and boil until sauce thickens, stirring frequently. Cool and pour over fruit.
Refrigerate for a few hours before serving!
