It is December and the cold has definitley crept in. For chilly nights nothing feels quite as homey as a big bowl of chicken soup.

Easy and delicious.


2 chicken breasts

32 ounces of chicken broth

4 large carrots

4 stalks of celery

1 red onion

3 tablespoons of chopped dill

1 tablespoon olive oil




Begin by boiling the chicken breasts (BHG taught me how to do this here). Dice carrots, celery and onion. Take chopped vegetables and simmer them in a large skillet with olive oil, salt and pepper. Let veggies simmer for 10 minutes.

Once chicken is done shred and place in a large pot. Add chicken broth, vegetables, and dill. Let cook on low for 30 minutes. Salt and pepper to taste.
