Lettuce wraps were on the menu this weekend. The perfect easy meal for a big group and very customizable!
1 pound ground turkey
1 1/2 tablespoon honey
2 teaspoons chili paste
2 tablespoons fish sauce (or soy sauce if you don’t have fish sauce)
1 tablespoon of oil (I used olive oil)
1 head butter lettuce
1 large shredded carrot
1/2 cup chopped peanuts
1 large handful of chopped mint
1 large diced cucumber
1 cup chopped scallions
Begin by cooking ground turkey in a large skillet until browned. In a bowl whisk together honey, chili paste, oil, fish sauce and 2 cups of water. Once mixed pour over the turkey. Cook on low heat and let simmer for 5 minutes. Peel off lettuce leaves from head and set out. Set all the toppings up in bowls so people can create their own lettuce wraps.
