She requested Strawberry Shortcake (not chocolate, but we still love her)! After researching shortcake recipes to test out, my friend Maggie told me that the BEST shortcake she had ever tasted was the Bisquick recipe. I trust her food suggestions entirely so Bisquick was added to my grocery list. Now fast forward to the finished product and Ms. Maggie deserves some kudos, the shortbread did not disappoint! So easy and delicious. An instant (ok well 10-12 minute) summer classic! Cheers to celebrating summer birthdays and Brigitte!
Strawberry Shortcake (adapted from this recipe)
2 1/3 cups Bisquick baking mix
1 tsp vanilla extract
1/2 cup almond milk
3 Tbsp sugar
2 pints fresh strawberries
1 cup heavy cream
1 tablespoon confectioners’ sugar
1/2 teaspoon pure vanilla extract
Heat oven to 425°F. In a large bowl, cut strawberries and set aside. In a medium bowl, stir Bisquick mix,almond milk, 3 tablespoons sugar and the vanilla until soft dough forms. On ungreased cookie sheet, drop dough by 6 spoonfuls. Bake 10 to 12 minutes or until golden brown. Meanwhile, in a small bowl, combine heavy cream, confectioners sugar and the vanilla. Beat whipping cream with electric mixer on high-speed until soft peaks form.
Split warm shortcakes; fill and top with strawberries and whipped cream. Enjoy!
